Key Ingredients for Authentic French Ratatouille
Tomatoes: Use ripe, juicy tomatoes for the best flavor. They are the base of the dish and add a natural sweetness. If possible use tomatoes when they are in season โ€“ they give the best taste! For this recipe i used a large can of crushed tomatoes and 4 large Roma tomatoes.

Zucchini: Fresh zucchini adds a slightly sweet element to the ratatouille. Slice them evenly for the best even cooking.

Eggplant: Choose firm eggplants. Their texture complements the other vegetables very well and absorbs the flavors.

Bell Peppers: A mix of red, yellow, and green bell peppers adds color and a slight sweetness. They also provide a nice crunch.

Onions: Yellow onions are ideal. They add a savory depth of flavor to the dish.

Garlic: Fresh garlic cloves add a robust aroma and enhance the overall flavor.

How to Make French Ratatouille?
This traditional Ratatouille recipe is simple and delicious. When slowly cooking the vegetables the release their natural sweetness and all of the vegetables infuse with flavors.

Step 1: Prepare the vegetables
Preheat the oven to 375ยฐF (190ยฐC).
Prep the vegetables โ€“ Slice the tomatoes, shred the carrots and chop onions, then thinly slice the zucchini, eggplant and bell peppers into even pieces.
Step 2: Sautรฉ the base
Heat the olive oil โ€“ In a large pan, warm 2 tablespoons of olive oil on medium heat.
Cook the carrots, onions and garlic โ€“ Sautรฉ the shredded carrots and chopped onions until they turn soft and translucent (about 5 minutes). Add the minced garlic and cook for 1 more minute, but be careful not to burn it. Add crushed tomatoes. Season with salt and pepper, thyme and basil.
Step 3: Layer the vegetables
Arrange in a baking dish โ€“ Spread the sautรฉed onion and garlic mixture at the bottom of a baking dish.
Create layers โ€“ Arrange the sliced tomatoes, zucchini, eggplant, and bell peppers in a circular pattern switching the vegetables for a classic ratatouille look.
Season โ€“ Drizzle the dish with the remaining olive oil and then sprinkle it with salt, pepper, and fresh thyme leaves.
Step 4: Bake
Cover and bake โ€“ Cover the dish with aluminum foil and bake for 45 minutes. The vegetables will soften and release their flavors.
Caramelize the vegetables โ€“ Remove the foil and bake for an additional 15 minutes until the top is slightly golden and caramelized.

Step 5: Serve and enjoy
Let it Rest โ€“ Allow the ratatouille to rest for a few minutes before serving.

Garnish & Serve โ€“ Sprinkle with fresh chopped basil and drizzle with the pan juices. Serve warm, cold, or at room temperature!

Same size Slicing: Slice the vegetables in the same size to get even cooking. I like to use a mandolin for this.

Layering Technique: For a beautiful presentation, layer the sliced vegetables in a circular pattern in the baking dish. This also makes even cooking and flavor distribution.
