This recipe is based on my YouTube video, with a few adjustments since publication. I prefer to build the sauce in the same pan instead of making a separate sauce because all the browned bits from the chicken give the cream more character.

This creamy mushroom chicken is different from my because this version focuses more specifically on chicken thighs and a thicker pan sauce. It is also different from because there is no bright lemon finish here. This one is deeper, earthier, and more mushroom-forward. Mushrooms release a lot of water when they hit the pan. If you add cream too early, they boil instead of brown, and the sauce becomes pale and weak. I prefer to cook the mushrooms first with a little butter and oil until they shrink, caramelize, and take on a golden colour. That step gives the sauce its real flavour.

The chicken thighs are seared skin-side down first. This renders some of the fat, crisps the skin, and leaves flavour in the pan. Then the shallots and garlic go in, followed by a small amount of white wine or chicken stock to lift the browned bits. After that, cream turns everything into a rich sauce.

This recipe is hearty comfort food with good protein from the chicken and richness from the cream. It is not a light salad-style meal, but it is a satisfying homemade dinner that can be balanced with vegetables, rice, potatoes, or a simple salad.

Ingredients
For the chicken:

8 bone-in, skin-on chicken thighs
1 1/2 teaspoons salt
1 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon garlic powder
1 tablespoon olive oil
1 tablespoon butter

For the mushroom cream sauce:

12 oz mushrooms, sliced
1 large shallot, finely chopped
3 cloves garlic, minced
1 tablespoon butter
1/2 cup dry white wine or chicken stock
1 cup heavy cream
1/2 cup chicken stock
1 teaspoon Dijon mustard
1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
1/4 cup grated Parmesan, optional
1 tablespoon chopped parsley
Salt and black pepper, to taste

Step-by-Step Instructions
1. Season the chicken
Pat the chicken thighs very dry with paper towel. This helps the skin brown instead of steaming. Season both sides with salt, black pepper, paprika, and garlic powder.

Let the chicken sit at room temperature for 10 to 15 minutes while you slice the mushrooms and prepare the sauce ingredients. This small rest helps the seasoning stick and gives the chicken a better sear.

2. Sear the chicken thighs
Heat olive oil and butter in a large skillet over medium-high heat. Place the chicken thighs skin-side down and let them cook without moving them for 6 to 8 minutes, or until the skin is golden.

Turn the chicken over and cook the second side for 3 to 4 minutes. The chicken does not need to be fully cooked yet. Transfer it to a plate and keep the pan on the heat.

If there is too much fat in the pan, spoon out a little, but leave enough behind to cook the mushrooms.

3. Brown the mushrooms
Add the sliced mushrooms to the same pan. Cook them over medium-high heat for 7 to 10 minutes, stirring occasionally. Do not rush this step. At first, the mushrooms will release moisture. Keep cooking until the liquid evaporates and the mushrooms begin to brown.

Add 1 tablespoon of butter near the end to give the mushrooms a richer flavour. Season lightly with salt and black pepper.

4. Add shallots and garlic
Reduce the heat to medium. Add the chopped shallot and cook for 2 minutes, until softened. Add the garlic and thyme, then cook for 30 seconds. Garlic burns quickly, so it should only cook long enough to become fragrant.

5. Deglaze the pan
Pour in the white wine or chicken stock. Scrape the bottom of the pan with a wooden spoon to release the browned bits. Let the liquid reduce by about half.

This is where the sauce starts to taste like a real pan sauce instead of just cream poured over chicken.

6. Build the cream sauce
Add the chicken stock, heavy cream, and Dijon mustard. Stir everything together and bring the sauce to a gentle simmer.

Add the Parmesan if using. It helps thicken the sauce slightly and gives it a savoury finish. Taste the sauce and adjust with salt and black pepper.

7. Finish cooking the chicken
Return the chicken thighs to the pan, skin-side up. Spoon a little sauce around the chicken, but try not to cover the crispy skin completely.

Reduce the heat to medium-low, cover partially, and simmer for 15 to 20 minutes, or until the chicken is fully cooked and tender. The internal temperature should reach 165Β°F.

If the sauce becomes too thick, add a splash of chicken stock. If it is too thin, simmer uncovered for a few extra minutes.

8. Garnish and serve
Sprinkle with chopped parsley and serve hot. This creamy mushroom chicken is excellent with rice, mashed potatoes, roasted vegetables, pasta, or crusty bread for the sauce.
