Pasta: I love using rigatoni for this dish—it’s big, hearty, and gives every bite more texture. If you don’t have it use traditional ditalini Pasta or even penne or ziti works just as well!

Sauté the vegetables: In a large sauté pan, heat 3 tablespoons of olive oil over medium heat. Add 1 finely chopped onion, 1 diced carrot, and 1 diced celery stalk. Cook for 5-7 minutes until the vegetables are softened and fragrant.
Add garlic and rosemary: Stir in 3 minced garlic cloves and 1 sprig of fresh rosemary. Cook for 1-2 minutes, letting the aroma of the garlic and herbs fill the kitchen.
