Oklahoma Nut Candy (Classic Creamy Southern Treat)

Introduction
Oklahoma Nut Candy is a timeless Southern confection known for its rich, creamy texture and sweet caramel flavor. Made with simple pantry ingredients like sugar, cream, butter, and crunchy nuts, this old-fashioned candy melts in your mouth with every bite. It’s a beloved homemade treat often prepared during holidays, family gatherings, or whenever you’re craving something sweet and nostalgic. Ingredients
6 cups granulated sugar, divided (2 cups and 4 cups)
2 cups heavy cream
½ cup unsalted butter
¼ teaspoon baking soda
1 teaspoon pure vanilla extract
1 ½ cups chopped walnuts or pecans
Instructions
1. Prep Your Pan
Lightly grease a 9×13-inch baking dish with butter or non-stick spray. Set aside.

2. Caramelize the Sugar
In a small, heavy-bottomed saucepan, add 2 cups of sugar. Cook over low heat, stirring often with a wooden spoon, until the sugar fully melts and turns a deep amber color (about 20 minutes). Watch carefully to avoid burning.

3. Simmer the Cream Mixture
In a large saucepan or Dutch oven, combine the remaining 4 cups of sugar with the heavy cream. Heat over low heat, stirring occasionally, until the mixture begins to simmer gently.

4. Combine the Sugars
Slowly pour the melted caramelized sugar into the large pot with the cream mixture, stirring continuously. Be cautious, as the mixture will bubble and release steam.

5. Cook to Soft-Ball Stage
Increase the heat to medium and attach a candy thermometer. Cook the mixture, stirring frequently, until it reaches 244°F (soft-ball stage).

6. Add the Mix-Ins
Remove the pot from heat immediately. Stir in the baking soda (it will foam slightly), then add the butter and vanilla extract. Mix until smooth and fully combined.

7. Let It Rest
Allow the candy mixture to sit undisturbed in the pot for about 20 minutes.

8. Stir and Set
Add the chopped nuts and vigorously stir until the mixture loses its glossy shine and becomes thick and matte.
