Line a baking tray with parchment paper and place the puff pastry squares on top. Prick them several times with a fork, then cover them with another sheet of parchment paper. Place several chickpeas or beans on top to weigh the pastry down.
Preheat the oven to 200°C, with heat from above and below. Place the tray in the oven and bake for approximately 30 minutes.
Meanwhile, prepare the pastry cream. Pour the milk into a saucepan over medium heat, reserving half a glass for later. Add the lemon peel and the teaspoon of vanilla extract to the milk in the saucepan, and let it heat.
In the reserved glass of milk, add the sugar, cornstarch, and egg yolks, after separating them from the whites. Mix well.
When the milk in the saucepan begins to boil, remove it from the heat and add the mixture from the glass. Remove and discard the lemon peel.
Stir everything together with a whisk, then return the saucepan to very low heat. Keep stirring until the mixture thickens. Once it reaches the desired texture, remove it from the heat, add the butter, and mix again with the whisk.
To assemble the dessert, place one sheet of puff pastry on a plate. Spread a layer of pastry cream over it, then place another sheet of puff pastry on top. Repeat the process, finishing with a sheet of puff pastry.
Finally, dust the top with powdered sugar.
