Directions
1. Preheat the oven to 375°F and lightly grease a 9×13-inch glass casserole dish.
2. Gather the green beans into 16 small bundles, using about the same number of beans in each bundle.
3. Wrap each bundle with a half slice of bacon, starting near one end and spiraling it around the center so the bundle holds together. Arrange the bundles seam-side down in the prepared casserole dish.
4. Drizzle the melted butter evenly over the bundles, then sprinkle the brown sugar across the top as evenly as possible.
5. Bake for 30 to 40 minutes, or until the bacon is browned and caramelized and the green beans are tender. If you want extra-crisp bacon, broil for 1 to 2 minutes at the end, watching carefully.
6. Spoon a little of the buttery glaze from the dish over the bundles before serving hot.
Variations & Tips
Make-ahead tip: You can assemble the bundles a few hours ahead, cover the dish, and refrigerate it. Add the butter and brown sugar just before baking for the best texture.
Par-cook for thicker bacon: If your bacon is especially thick-cut, partially cook it for a few minutes first so it has time to crisp by the time the green beans are done.
Sweeter glaze: For a more candied finish, add an extra tablespoon or two of brown sugar over the top before the pan goes into the oven.
Use canned or frozen carefully: Fresh green beans hold up best here, but if you use frozen green beans, thaw and dry them thoroughly first. Canned green beans are much softer and can overcook quickly.
